Gluten Free Chicken Parmesan

    • 6 skinless, boneless thin-sliced chicken breasts, or skinless, boneless chicken breasts halved to make fillets

    • Salt and black pepper, to taste

    • 2 large eggs

    • 1 cup gluten-free panko bread crumbs (I like 4C gluten-free panko bread crumbs. I buy it at Walmart.)

    • 1 cup gluten-free bread crumbs (I like 4C gluten-free bread crumbs. I buy it at Walmart.)

    • ½ cup Parmesan cheese, grated (For dairy-free: I like Follow Your Heart dairy-free parmesan cheese.)

    • ½ teaspoon garlic powder

    • ½ teaspoon onion powder

    • 1 tablespoon Italian seasoning

    • ½ cup gluten-free flour (I like Pillsbury gluten-free flour.)

    • ¼ cup cornstarch

    • ½ cup olive oil (for frying, you may need a little more)

    • ½ cup gluten-free marinara sauce (use your favorite brand!)

    • 1 cup mozzarella cheese, sliced or shredded (For dairy-free: I like Violife dairy-free mozzarella cheese shreds.)

    • ½ cup Parmesan cheese, for topping (For dairy-free: I like Follow Your Heart dairy-free parmesan cheese.)

    • ¼ cup fresh basil, chopped (for garnish)

Instructions

  • Season the chicken breasts with salt and pepper.

  • Set up three shallow bowls: one with gluten-free flour mixed with cornstarch, one with beaten eggs, and one with a mixture of gluten-free panko, gluten-free bread crumbs, Parmesan cheese, garlic powder, onion powder, and Italian seasoning.

  • Dredge each chicken breast in the flour mixture, then dip into the eggs, and coat thoroughly in the breadcrumb mixture.

  • Heat olive oil in a large skillet over medium heat. Fry the breaded chicken in batches for about 3-4 minutes per side until golden brown. Transfer to a paper towel-lined plate to drain.

  • Preheat oven to 400°F (200°C). Arrange the fried chicken in a baking dish.

  • Spoon marinara sauce over each piece of chicken, then top with sliced or shredded mozzarella cheese and extra Parmesan cheese.

  • Bake for 15-20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.

 

  • Garnish with fresh basil and serve immediately.
